Ethel Bakery has an outstanding culinary reputation and is located in a +/- 17,000 SF building that prepares all of Rutgers New Brunswick Campuses’ baking needs for the student and faculty population.
R2A & R2I worked with Rutgers to renovate the existing Ethel Bakery located on their New Brunswick Campus in New Jersey. We directed the specialty consultants to accomplish the project in an aggressive ‘Design to Open’ schedule of seven months including major upgrades to the buildings infrastructure and utilities.
The bakery features dry and refrigerated storage, mixing/proofing areas, baking ovens and related kitchen equipment, cart washing stations, prep areas, and a pastry finishing room.
